We roast by
listening.
Every lot that arrives at our Mission roastery carries the fingerprint of its origin — the altitude, the varietal, the processing method. Our job is to develop what's already there, not to impose a style on it.
Light roasts on our Yirgacheffe and Kenya lots preserve the floral aromatics and bright acidity that make these origins sing. A medium roast on our Guatemala coaxes sweetness and structure that the green coffee promises but doesn't fully reveal raw.
We profile each lot individually, pulling test roasts across multiple sessions before committing to a production curve. The result: coffees that taste like themselves.
