Tasting Notes
Our most patient wine — three years on the lees in the cool Anderson Valley cellars, followed by hand-riddling and disgorgement. The result is sparkling wine of genuine depth, made in the traditional Champagne method from a single varietal that thrives in this fog-shrouded valley.
Nose
Fine, persistent mousse. Complex aromas of green apple, freshly baked bread, and chalk dust give way to subtle toasted almond and lemon curd.
Palate
Crisp and precise with fine, creamy bubbles. The pure Chardonnay expression delivers chalky minerality, fresh citrus, and a satisfying bready depth from three years on the lees.
Finish
Long and mineral with impressive persistence. Classic and elegant.

"Blanc de Blancs is best enjoyed between 2024 and 2033. Decant for 45 minutes if drinking young. Serve at 60–65°F in a Bordeaux glass."
