Cured for two weeks after harvest to concentrate natural sweetness.
Started under glass in April, planted out in early June in rows with 90cm spacing. The long, hot growing season we get in our south-facing fields allows the squash to develop full sweetness before the first frosts.
Our butternut squash is grown slowly through summer and harvested in September when the skin has hardened to a deep tan. We then cure them in our barn for two weeks — this extra step converts starches to sugars and allows them to store for months.
