Hardneck varieties with complex flavour — harvested in July, cured in the barn.
Individual cloves planted in raised beds in October, 15cm apart. Scapes (curly flower stems) are harvested in June — a seasonal treat in their own right. Lifted by hand when the lower leaves turn brown, then braided and hung in the barn.
We grow three hardneck garlic varieties on the farm — Rocambole, Purple Stripe, and Porcelain. Planted in October and harvested the following July, each bulb is cured in our barn for three weeks before sale. Hardneck garlic has a more complex, nuanced flavour than the softneck types common in supermarkets.
